A dining room needs roughly 100 W of cooling per m² as a starting point, but a kitchen can need 50% more or higher once you add ovens, grills, fryers and dishwashers — heat sources that run hardest exactly when the room is busiest. That's why restaurants are almost always zoned: the dining room, bar and kitchen each get their own capacity and controls rather than one shared system fighting itself. Dining, bar and kitchen: matching the system to the zone

The right set-up depends on the layout, the ceiling and how independently you need to control each area.

  • Dining room — discreet ceiling cassettes or slim wall units keep the space comfortable without draughts over diners; quiet operation matters as much as capacity in a room where people talk.

Air-to-air restaurant systems heat as well as cool (SCOP typically 3.5–4+), so the same units keep diners comfortable in winter — though, being air-to-air, they are not eligible for the Boiler Upgrade Scheme, which supports air-to-water heat pumps only.

TM44 and F-Gas: the legal duties for restaurants

Restaurant systems frequently exceed a combined rated cooling output of 12 kW once dining, bar and kitchen zones are added together — and above that threshold a TM44 inspection by an accredited assessor is legally required at least every five years, with the report lodged on the national register. The duty falls on whoever controls the plant (landlord or tenant), and non-compliance can bring enforcement and fines from the local authority. Separately, only F-Gas certified engineers may legally install or work on refrigerant systems, and refrigerant must never be vented to the atmosphere. If you take over an existing restaurant, ask for the current TM44 certificate alongside the EPC and any gas-safety and extract records.
