Why kitchens need so much more cooling

A dining room is sized at roughly 100 W of cooling per m². A working kitchen can need three to five times that once you count the ovens, grills, fryers, pass lamps and dishwasher — and the load peaks during service, exactly when the room is fullest. The other half of the problem is ventilation. The extract canopy over the cooking line shifts huge volumes of air to clear heat, steam and grease, and every cubic metre it removes has to be replaced by make-up air coming in. If that incoming air isn't tempered, your comfort units end up cooling the street. Picking cooling that survives a kitchen

The kit that keeps an office comfortable will struggle and clog in a kitchen. A few things separate a system that lasts from one you'll be repairing inside two summers.

  • Mount it off the line — units sited directly over grills and fryers drag grease-laden air across the coil and foul fast, so cooling is usually delivered to the prep and plating areas and the wider room while the canopy handles the heat at source.
  • Grease-tolerant, easy-clean units — ceiling cassettes with washable filters and accessible coils are the usual choice because they can actually be maintained in a food setting.
  • Temper the make-up air — on larger kitchens the biggest single win is conditioning the replacement air brought in to balance the extract, rather than clawing the temperature back with ever more comfort units.
  • VRF for bigger or multi-area sites — a multi-split suits a single kitchen, while a VRF system runs the kitchen, servery and back office off one circuit with independent control, and heat-recovery variants can move warmth to where it's wanted.

Like other air-to-air systems, kitchen comfort units heat as well as cool (SCOP typically 3.5–4+), which is useful for a servery or staff area in winter — though, being air-to-air, they sit outside the Boiler Upgrade Scheme, which supports air-to-water heat pumps only.

Legal duties: F-Gas, worker heat and inspections

Two sets of rules bear on every kitchen job. First, only F-Gas certified engineers may legally install or work on refrigerant systems, and refrigerant must never be vented to the atmosphere — a leak has to be traced and repaired before any re-gas.
